Glenda's Broccoli Salad
1.5 pounds uncooked broccoli, cut into bite-sized pieces
1 small purple onion, chopped
1.5 cups bacon bits
1 cup golden raisins (may also be called sultanas)
1 cup salted sunflower seeds
Dressing:
1 cup mayonnaise
1/2 cup sugar
3 tablespoons vinegar
Mix the mayonnaise, sugar, and vinegar to make the dressing. Add the broccoli, onion, bacon bits, and raisins. Mix well, and marinate in refrigerator overnight. Add sunflower seeds just before serving in the Chill Out & About®.
Grandma Hoffine's Potato Salad
4 - 6 hard boiled eggs
8 - 10 medium potatoes
1/4 cup sour cream
1/2 cup mayonnaise
1/4 tablespoon mustard
1 tablespoon vinegar
1 tablespoon sugar
1/2 cup finely chopped onion
1/2 cup finely chopped celery
salt and pepper to taste
Boil potatoes until slightly tender. Cut them into bite-sized cubes. Separate egg yolks from whites and rough chop the whites. Mix all ingredients except egg whites and potatoes. Add egg whites and potatoes and serve in the Chill Out & About®.
Jenny J's Buffalo Chicken Dip
4 boneless chicken breasts, boiled and shredded in food processor
12 ounces Frank's Red Hot Sauce
Mix above and pour into a 13x9" baking dish.
Two 8-ounce packages cream cheese
16 ounces ranch dressing
1 cup chopped celery
Mix and heat above three ingredients in saucepan till smooth. Pour over chicken mixture. Top with 1 package shredded Monterey Jack cheese.
Bake 375°F for 45 minutes. Refrigerate until chilled through. Serve it in the 8 piece Chill Out & About with the dip in the large round bowl and the carrots and celery sticks in the small rectangle bowls.
